家乡面 Kar Hiong

材料 :
干面300克、麻油½茶匙、食油½茶匙、鸡肉150克(切粒) 、香菇20克(浸泡后切丝) 、小葱头1粒(剁碎)
、食油1汤匙、鸡高汤½杯
装饰 :
青葱1棵(切粒) 、红辣椒(切粒) 、芫要碎少许、菜心十100克( 烫)
调昧料 :
毛油2汤匙、酱油1汤匙、 臼糖½茶匙或适量、黑酱油¼茶匙、胡椒粉¼茶匙、麻油1茶匙、 浓缩鸡精粉1茶匙
勾芙 :
生粉1茶匙、清水1汤匙
做法 :
1. 把唯一干面放入滚水中,加入食油和麻油’煮约3分钟即可盛出滴干水。
2. 起锅热1汤匙食油,把葱头爆至香和转金黄色后,加入鸡肉、香菇及调昧料。炒均后倒入鸡高汤,煮
4-5分钟后勾芙。
3.把煮好的面放在碟子里,把鸡肉香菇汁倒在面上,排入菜心,再撒入青葱粒、芫要粒及辣椒粒即可。

Ingredients :
300g Vit s Air Dried Noodles ½ tsp sesame oil, ½ tsp oil, 150g chicken fillet (diced), 20g
dried Chinese mushrooms (soaked and shredded), 1 shallot(chopped), 1tbsp oil,
½ cup fresh chicken stock or water
Garnishing :
1 stalk spring onion (chopped), some sliced fresh red chilli, some chopped coriander
leaves, 100g mustard leaves(choy sum, blanched)
Seasoning :
2tbsp oyster sauce, 1tbsp light soy sauce, ½ tsp sugar or to taste, ¼ tsp thick soy
sauce, ¼ tsp pep- per, 1 tsp sesame oil, 1 tsp concentrated chicken stock
Thickening :
1 tsp cornflour, 1 tbsp water
Method :
1. Drop Vit s Air Dried Noodles into boiling water.Add oil and sesame oil into
the boiling water.Simmer for 3 minutes. Drain well and set aside.
2. Heat wok with 1 tbsp oil and sauté shallots until fragrant and golden. Add
chicken, mushrooms and seasoning. Stir-fry well to combine. Pour in fresh chicken stock or water and bring to
the boil. Cook for 4-5 minutes. Add thickening.
3. To serve:Put prepared noodles into individual serving plates.Add chicken and mushrooms sauce and serve with
blanched choy sum.Garnish with chopped spring onion, coriander leaves and red chilli.
